70 MINUTE LAMB LOAF, POTATOES AND SALAD
Preparation time: 10 minutes Cooking time: 1 hour Serves: 4


 

1. Mix together 750g minced lamb, 1 large chopped onion, handful finely chopped herbs. Add 1/4 to 1/2 cup of cereal. Spread the mixture into a loaf tin. Switch on oven to 180C.

2. Roughly chop one 425g tin tomatoes and add seasoning to taste. Pour this over the meat and bake for 1 hour. At the same time, place 4 washed potatoes into the oven.

3. When loaf is ready it will have shrunk from the sides of the tin. Leave it to stand in the tin, covered with foil for a few minutes then pour off the juices and cut the loaf into slices. Serve with the potatoes, topped with yoghurt and chopped chives and a salad of sliced tomatoes and onion.
